Amongst other things, the conversion covers Elia’s career in wine, Mallorca’s winemaking culture and the preservation of at risk Italian grape varieties.

Elia Quarzago is a winemaker and vineyard manager at Bodega Finca Can Gelat in Mallorca and member of GRASPO, a reserach project based in Verona, Italy, with the aim of studying, researching, planting, communicating and doing micro vinifications of abandoned varieties of vines at an high risk of extinction. The lastest book published is called "100 custodians for 100 vine varieties" and tells the stories of 100 viticulturists who have allowed the survival of 100 varieties throughout Italy. The technical aspects are mixed with the tales of different regional cultures and traditions.
